Oaxaca is more diverse than that, especially if you go to the little towns outside of it. This is a personal story about how wandering off the beaten path, and Oaxaca Coffee helped me to heal some wounds\u2026\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t

Trabaj\u00e9 por 18 a\u00f1os en la industria del software, mis \u00faltimos 2 proyectos fueron apps para compra\/venta de acciones y para Internet de las Cosas. Fueron los a\u00f1os m\u00e1s vac\u00edos de mi carrera profesional. Entonces decid\u00ed irme a viajar a Sudam\u00e9rica mientras segu\u00eda trabajando de manera remota. En alg\u00fan punto renunci\u00e9 a mi trabajo y a programar. Por ello empec\u00e9 a a trabajar en este proyecto, Nomad Cook, contando historias de la gente que iba conociendo mientras viajaba.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t

After traveling through the countries there, my plan was to come back to Mexico to renew passport and visas, and then head to South East Asia to continue doing the same. <\/span>I wanted to do something more meaningful than filming food videos, so when I arrived in Oaxaca, all the plans changed. I thought that opening a small restaurant with a community-oriented model would be a good way to achieve that goal.<\/span><\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t

Comenc\u00e9 a buscar personas que se unieran al proyecto. Me asoci\u00e9 con un chef local. En pocas palabras, las cosas no salieron bien. Cuando llegamos a un punto de no retorno, \u00e9l desapareci\u00f3. Yo no ten\u00eda el conocimiento o experiencia para continuar por mi cuenta. El dinero segu\u00eda acab\u00e1ndose, era cuesti\u00f3n de tiempo hasta que todo se derrumbara.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t

Un viaje para curar<\/h2>\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t

Independientemente del fracaso, decid\u00ed quedarme en Oaxaca, para reconstruir aqu\u00ed. Casi en quiebra, me fui a viajar en solitario a la mixteca con el \u00fanico prop\u00f3sito de pasar tiempo conmigo mismo. Termin\u00e9 en Putla, donde conoc\u00ed a Iv\u00e1n, quien me llev\u00f3 a llas afueras del pueblo, para probar un delicioso desayuno. Estuvo muy rico. Me gustar\u00eda poder decir lo mismo sobre su caf\u00e9 de olla; entonces le pregunt\u00e9 a Ivan si hab\u00eda un lugar mejor para tomar caf\u00e9 oaxaque\u00f1o. No sab\u00eda que lo que vendr\u00eda despu\u00e9s cambiar\u00eda muchas cosas en mi vida.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t

Regresamos a Putla, Iv\u00e1n me llev\u00f3 a una peque\u00f1a cafeter\u00eda en la plaza principal. Su caf\u00e9 estaba delicioso, recuerdo que ped\u00ed un espresso y un americano que me volaron la cabeza. Es uno de los caf\u00e9s m\u00e1s ricos que he probado. Ten\u00edan todo lo que necesitaba para reconfortar mi coraz\u00f3n. Recuerdo que una de las cosas que me llam\u00f3 la atenci\u00f3n fue un bonito perro con gorra pintado en la pared. Era su logotipo, y en ese momento, sent\u00ed que las cosas iban a estar mejor. \u00bfAlguna vez te has sentido as\u00ed? Estar en un momento de oscuridad y luego, gracias a la creatividad, pasi\u00f3n y amabilidad de otra persona, te sientes mejor. Bueno, esa es la mejor manera en que puedo describirlo. Me fui de Putla sinti\u00e9ndome mejor y listo para el primer paso para reconstruir Nomad Cook y a mi.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t

I went back to Putla again, and we had our first meeting. We enjoyed several cups of coffee. We discussed their communication needs and ideas. After brainstorming, we decided that the best approach to start would be a video about the chain, from the harvest, all the way to the bars. They told me about their concern about how underappreciated the people behind the production are, so they wanted to depict the process.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t

Nuestra pasi\u00f3n compartida por el caf\u00e9 hizo que la camarader\u00eda ocurriera de inmediato, pude sentir todo el amor que hab\u00edan puesto en su proyecto. Estaba descubriendo una historia inspiradora; estaba escuchando a todo el equipo y c\u00f3mo se sent\u00edan al ver su esfuerzo materializado en algo hermoso.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t

Un pueblo de caf\u00e9 oaxaque\u00f1o en las monta\u00f1as<\/h2>\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t

Manejamos hasta Zaragoza Itundujia, el lugar donde cultivan su caf\u00e9. Me presentaron a la comunidad cafetalera que trabaja ah\u00ed. Caminamos cuidadosamente por las laderas para evitar tropezar y rodar cuesta abajo mientras film\u00e1bamos.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t

Me sent\u00eda como si estuviera en un para\u00edso: las vistas con la neblina matutina, la forma en que la gente me recib\u00eda con comida y sus conversaciones, el silencio del bosque, el caf\u00e9 secando al sol en los tejados. Pero no todo es conmovedor. Otros hechos me regresaron a la realidad. Es f\u00e1cil dejar de ver las desventajas que enfrentan. Por eso, tambi\u00e9n es importante mencionar la falta de acceso a servicios b\u00e1sicos como atenci\u00f3n primaria de salud, educaci\u00f3n superior y caminos en buen estado. Este \u00faltimo espec\u00edficamente hace que sea m\u00e1s dif\u00edcil para las familias productoras trasladar su caf\u00e9 a otras ciudades para entregarlo. En otras palabras, todos esos factores afectan su productividad.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t

Los productores independientes de caf\u00e9 en peque\u00f1os pueblos, lejos de las grandes ciudades, tienen opciones limitadas para vender su coecha. No tienen acceso a recursos para mejorar la calidad de su caf\u00e9, actualizar sus equipos o acceder a capacitaci\u00f3n. Adem\u00e1s, no siempre tienen acceso a un mercado libre. Es importante crear conciencia acerca de estos problemas.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t

I learned all this after interviewing and talking to the people of this town and Diracsema. They offer another option to the producers to sell their harvest. They pay, immediately, a more favorable price to them. They work together to improve the quality of their beans and share their techniques with them.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t

The next video to produce was to document the work of Obdulia. She decided to risk a significant percent of her crop to experiment with a honey fermentation process. That batch ended up being one of the most outstanding beans of 2019.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t

One of the objectives of Nomad Cook is to tell stories about people that are doing something positive for their communities. With all the odds against her, she made it to international coffee conferences. She became one of the most knowledgeable people in Oaxaca about specialty coffee. They decided to open a specialty coffee bar<\/a> in Putla, in the middle of Zaragoza and Oaxaca City.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t

They bet against the odds; the logical thing to do was trying to open the coffee shop in Oaxaca City. They found a way to distribute their coffee in some restaurants and to sell their coffee to roasters so they can make their own blends or roast it their way. A growing project with a big soul, that’s how I’d describe them. They inspired me to keep going forward through their passion and love for coffee.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t

Comenc\u00e9 a impartir clases de cocina en la ciudad de Oaxaca para compartir mi pasi\u00f3n como cocinero y para fondear la producci\u00f3n de conteUna de las lecciones que aprend\u00ed fue que empezar un negocio en un campo en el que no tienes experiencia y con personas que apenas conociste, no es un buen plan. Los objetivos y la idea inicial de iniciar un negocio siguen en pie, pero ahora, se trata de dar soporte t\u00e9cnico a comunidades locales para contar sus historias.
